N°001 - Raw Forest Honey

A deep, resinous honey harvested from the forests of Slovenia - where spruce, fir and linden trees create one of Europe's most distinctive terroirs for honey production.

Flavour profile

Dark amber in colour with a complex, layered taste. Expect notes of warm caramel, dried fruit and a subtle woody finish that lingers. Less sweet than lighter honeys - instead, it carries a rich, almost malty depth that pairs beautifully with aged cheese, dark bread, roasted nuts and strong coffee. Many people who think they don't like honey discover they simply haven't tried a proper forest honey.

What makes forest honey different

Unlike blossom honeys - which bees produce from flower nectar - forest honey comes from honeydew. Bees collect the sweet secretions left on conifer needles and bark by aphids, then transform them into honey with a distinctly mineral, complex character. This process gives forest honey its darker colour, lower sugar content and higher mineral concentration compared to conventional honey.

Why Slovenian honey

Slovenia has one of the oldest and most respected beekeeping traditions in Europe. The country is home to the native Carniolan bee - one of the most gentle and productive subspecies in the world - and beekeeping here is protected by law. Slovenia initiated World Bee Day at the United Nations, and the practice of beekeeping is deeply embedded in the national culture. The forests that cover more than 60% of the country remain largely untouched by industrial agriculture, producing honey with a purity and depth that is difficult to find elsewhere.

How we source

Every jar of NECTICO forest honey is directly sourced from independent Slovenian beekeepers. We work with small-scale producers who manage their hives traditionally - without industrial shortcuts. There is no blending with imported honey, no mixing of origins, no compromise on traceability. When you open a jar of N°001, you are tasting a single origin - one harvest, one region, one tradition.

Laboratory tested

Every batch is independently tested in a certified laboratory before bottling. We test for purity, authenticity, moisture content and the absence of residues. The results are documented and traceable. This is not a marketing claim - it is a process we follow without exception.

Packaging

NECTICO is designed to stay on your kitchen counter - not hidden in a cupboard. The jar is crafted from premium glass with a natural wood lid, and the label is deliberately minimal. We believe honey deserves the same attention to design as specialty coffee, fine olive oil or premium skincare.

A note on crystallisation

Raw honey crystallises naturally over time - this is a sign of purity, not a defect. Forest honey crystallises more slowly than most varieties due to its composition. If crystallisation occurs, gently warm the jar in a bath of warm water (not above 40 degrees) to return it to liquid form. Do not microwave.
